Happy Second Anniversary to BCE! Our first issue went out
May 26, 2000 and we are still publishing. Wow! What a great two
years it has been. All of us at BCE sincerely thank you for your
continued support. You all have made this journal better and
we appreciate your loyalty.
Many readers sent emails congratulating us on our anniversary and
we had intended to publish the comments, but we had a nasty virus
invade the computer system last week and we lost many of our files.
(Don't worry, you cannot be exposed to a virus through this email.)
We were right in the middle of converting to the new listserver and
format so we are late in getting this issue to you.
As you have noticed, this issue looks different. This is the
first issue to go out in html (hyper text markup language).
It is formatted in the same language used for web pages.
The biggest improvement is that you can jump directly to articles.
You can now go right to the article you want to read without having
to scroll, scroll, and scroll until you find it. Just click on the
article (or Back to Top) and there you are.
Also, we want to shorten the length of the issues a little, so
you will notice that some articles have a link (More...) at the
end. If you want to continue the article, click on More, and
you will be whisked to a web page for the complete article. To
return to BCE, just close or minimize your browser.
Our goal is to keep the format of BCE simple, while making it easier
to read. We are all bombarded with too much chazarai on the Internet
and we do not intend to bring all that to BCE.
Our goal with this journal is to promote good coffee. We want to
learn, educate, and entertain. We publish every other Friday via
email and readers include coffee consumers, home roasters,
coffee geeks, retailers, growers, roasters, equipment dealers,
and anyone else who shares our passion for our most wonderful
beverage. If you want to learn more about the fascinating world
of coffee, this is the place. We don't sell anything and
subscription is free.

During the fall of 1996, one of our customers (a Boston, MA area
retailer) told us that they had been brewing and serving our Country
French blend. They told us that some of their customers were asking
if we had anything that was darker roasted. Country French was our
darkest roast at the time, and we were amazed that Boston area
consumers would be asking for anything darker. New England coffee
consumers traditionally don't prefer dark roasted coffee.
We had developed our reputation on roasting coffee only to the
point necessary to bring out the full flavor profile that any particular
variety or blend had to offer. Consequently, we were very resistant to
roasting anything darker than our Country French, which we regarded
as very dark.
After months of requests, we finally decided to give them what
they wanted. After all, we are in business and we have a responsibility
to be responsive to our customers. However, we were very nervous
about producing a product that would be such a radical departure
from the rest of our products, even our Country French blend.

For Traditional, Semi-Automatic Espresso Machines
Note: the following does not fully apply to superautomatic, hand
lever, or steam power-generated espresso machines that "may" operate
under different principles and guidelines for proper operation .
Part III: The "Arte"
This is where we put it all together! Although your pump driven
espresso machine will apply the required water pressure and proper
temperature, you will need to focus on the interdependent variables
to reach "Espresso Nirvana!" In other words, you will need to
adjust the different variables that you can control in the order
we have outlined below:
Preheating
First and foremost, it is extremely important to preheat the
portafilter handle, filter basket, and cups you will be extracting
into. Otherwise, the crema will not be achieved due to the fact
that the loss of heat will not allow a proper extraction. The
espresso beverage will have a cooler, weak, and/or bitter flavor
profile. We recommend filling your cup with hot water from the
steam wand on your espresso machine and pulling an"empty shot"
of about 4 ounces of hot water through a filter handle and basket
