My friends, it is time to get back to work building the economy
of our country. Hundreds of thousands of Americans have lost
their jobs because of the atrocity. Our patriotic duty right now
is to deny any victory to the evil people who attacked us by not
giving them any satisfaction that their evil has succeeded.

Most of us cannot help at Ground Zero or put on a uniform. We
fly the flag and pray the terrorists are stopped before they
murder again. We hope and pray our leaders make the right
decisions. We want to do more to help and we can.

Buy something. Take a trip to New York City. Take advantage of
the low fares and the discounted hotel prices. Go out to eat.
Buy some new clothes, a new computer, some new furniture. Buy
that grinder or that espresso machine you've been wanting.
Donate blood and send a check to the Red Cross. Buy coffee from
this week's advertisers. You'll help yourself and the relief
effort at the same time.

I had a double shot of espresso recently that was the very best
I have ever enjoyed. My words fail me in describing how good it
was. The crema was heavenly and was at least 90% of the cup. The
taste was ever bit as good as fresh ground coffee smells. I
downed the cup in a few quick sips and flooded my mouth and nose
with flavor, aroma, and a wonderful, sensual velvety feel. I
could still smell and taste the coffee a full two hours later. I
have been striving to make such a cup of espresso but I haven't
even come close. That cup was the standard by which I will judge
my own and all others from now on. The espresso was Malabar Gold

experienced this delightful man and his coffee at the recent
NASCORE show.


My goal with this journal is to promote good coffee. I want to
learn, educate, and entertain. I publish every other Friday via
email and readers include coffee consumers, home roasters,
coffee geeks, retailers, growers, roasters, equipment dealers,
and anyone else who shares our passion for our most wonderful
beverage. If you want to learn more about the fascinating world

3. Diedrich Roasting Course

What a challenge ... I don't feel up to the task, considering
how little my homeroaster's skills are when faced with a 3rd
generation coffee expert like Stephen Diedrich, the course
instructor. My jaw was literally flapping open and I know I
retained only so much ... I asked if I could attend another,
perhaps next year, after I've made more progress. Stephen
Diedrich is well known in the SCAA and gives these 2-day courses
for free, in the interest of education. Tom, co-owner of Sweet
Maria's (himself a student several years ago and an owner of a
12 kg Diedrich roaster), makes the point that in attending these
seminars, that one should be at least consider buying a roaster.
A good point, but one that Steve Diedrich or his company would
never make. Zero pressure and Total "Class". I attended with
about 30 others, nearly all in the "biz", from baristas, to
coffee house and coffee chain owners and pro roasters to
growers.

I made a lot of contacts, as part of the class and roasted all
the coffee I wanted on a large, new 12 kg Diedrich shop roaster.
It was heaven: With one hand on the flame control, the other on
the air control, watching the flame height and the temperature
display and elapsed timer, while frequently pulling sample
trowel full's to compare bean color with a previous batch!
There's a lot to this. Personally, though I'd love to,
circumstances for now seem to dictate I will not be getting into
the coffee "biz", in any major way.

As a homeroaster though, when finances allow (about $3,000), I
feel sure I will be getting a small Diedrich tabletop roaster to
place on a fat tired cart, to be fueled by a 5 gal. propane tank
and trundled out into the yard on roast days. What a way to
homeroast! I could find a vertical marketing niche for my
coffees, as an enthusiast myself. There's plenty of room for
that. One small roaster I know sells only to post production
film companies, delivering coffee from his van or through the
Internet and mail-order. Another sells just to fly fishing
camps.

You see, you could start anywhere, at any level, but for a
number of reasons, besides profitability, one would do well to
do their own roasting. For fun and profit! That's how I see
it, but my dreams are small and I delight in the ordinary.

5 Caffeine Nation

Futurists writing in the middle of the 20th Century often
envisioned a world where privacy had been replaced by
consumerism and the people were, with the government's approval,
medicated into complacency. Even Aldous Huxley however, did not
foresee the rise of Bean Brother.

The press coverage goes to Ecstasy, Heroin and Crack but the
most popular drug in the history of civilization is The Big C -
Caffeine.

It would seem only a matter of time before the prohibitionists
turn their attention to the worldwide obsession with coffee.
After all, millions of us are literally addicted to it. The
average cup of specialty coffee (using Arabica beans of course)
has about 150 milligrams of caffeine. If you consume about 5
cups a day you are a java junkie (go ahead, try to start your
day without that large mug of black gold!).

Of course caffeine is found in other foods and beverages, but
not in the quantities that coffee possesses. For example tea and
some sodas will contain between 50 and 75 milligrams per normal
serving.

Thinking you may be overdoing it a bit and would like to
decaffeinate yourself? Here are a few more facts that may help.
1st, know your beans. The darker roasts often -surprise, have
far less caffeine than the standard blends. A shot of espresso
can have far less caffeine than the donut man's regular blend!
2nd, Low caffeine does not mean less bitterness. If your coffee
is too bitter, try another bean or blend.
3rd, Caffeine does not equate with acidity. A low caffeine
coffee could have a very high acidity. Ask your roaster.
4th, Robusta beans - which are not the standard bean used by
most specialty roasters, have twice the caffeine as Arabica
beans. When a roast master wants to crank up the caffeine,
Robusta is often the answer.
5th, Tanzanian Peaberry, followed closely by Columbian are the
two Arabica beans with the most caffeine per cup. Beans from
Zimbabwe have the lowest caffeine rating.

6. Kona Coffee Cupping Competition

The Annual Kona Coffee Cultural Festival takes place the week of
November 3-11, 2001. An Event of the Festival, the Kona Coffee
Cupping Competition, sponsored by Gevalia Kaffe, will be held on

With due respect, Fair Trade coffee is not everything to every
one. For instance, I am a Kona coffee farmer. We pay a fair
wage to everyone. We live in America too, pay US taxes and yet,
we would never get the official sanction of the "Fair Trade
Association.". They do not come here. Our coffee is certainly
Fair Trade.

I believe that Fair Trade Association is another massive
political unknown, and I wonder how much money actually gets to
the individual farmer/grower etc. and actually improves his lot.

Why not buy awesome coffee directly from a Kona coffee farmer
who pays taxes just like you, who gets no subsidy from the US
government, etc.

Be wary of Fair Trade being THE answer.

8. World coffee prices still plunging

AS the price of coffee hits a new low, of about one eighth of
the rate it was in 1994, a new report has revealed that coffee
beans sometimes exchange hands up to 150 times before they reach
western supermarket shelves.

Coffee is in fact the world's second most traded commodity after
crude oil, but unlike oil, it is no longer a valuable foreign-
exchange earner.

According to the Fair-trade Foundation's report, spilling the
beans, small independent coffee farmers in places such as
Tanzania and Uganda are in a chronically weak position when it
comes to selling to local dealers.

With only one major harvest a year, farmers are so desperate for
cash that by the time their crop arrives they are forced to sell
at rates often completely uneconomic for them.

The International Coffee Organisation (ICO) recently released
figures showing that the world coffee economy has risen by $20
billion since 1991, when it was worth $30 billion, but in that
time the producers' share has fallen from $12 billion to $8
billion.

Now the vast coffee chains such as Starbucks spend very little
of their actual costs on coffee itself, far more expensive to
them, is the price of property and marketing for their shops.

Prices on the world market are now their lowest in 36 year this
month saw robusta selling for as little as $464 a tonne and the
situation is not expected to improve in the foreseeable future.
Yet only seven years ago, in 1994, coffee was selling as high as
$4,091 per tonne.

Hawaiian coffees are truly unique, not only in quality and
flavor, but they are also the only coffees grown and produced in
the United States. Ideal climatic conditions - temperature,
humidity, altitude - and rich volcanic soil enables Hawaiian

There are several different growing regions of Hawaiian coffees.

10. Confessions of a Coffee Addict

Hi. My name is Hal, and I'm a coffee addict.

I am sure I am genetically predisposed to coffee addiction. I
became addicted in my pre-school years before I was tall enough
to see over the top of the table. At family get togethers, after
all the adults had left the dining table, I would make the
rounds, feeling for coffee cups and draining the dregs.

Later, as a teenager I bargained good behavior for permission to
drink coffee openly.

Yes, I am a coffee addict, and I freely and openly admit it. I'd
like to share with you how I learned to deal with my addiction.
By doing so, I hope I can help fellow coffee addicts, maybe some
who have not yet admitted to themselves they are addicted to
coffee.

I think my addiction is to the taste, as well as to the
caffeine. "Stay awake" pills just don't cut it for me, so the
need for caffeine isn't the only source of my addiction. No, I'm
in it for the taste too.

Taste and caffeine. Caffeine and taste. Two sides of the same
wonderful coin.

Decaf? Not for me. It lacks both caffeine and taste. More
correctly, it has a funny taste. A funny smell too. It ought to
be illegal to call that stuff coffee. Maybe call it "artificial
coffee" or "pseudo-coffee." Just don't serve it to friends, at
least not unless you warn them first. Taste is important.
Caffeine is important. Taste and caffeine. Caffeine and taste.

Yes, I'm a coffee addict. I deal with my addiction by embracing
it, yielding totally to its call.

This is what I did and this is what I would suggest for you:
make it a hobby. Hobbies are sometimes called "consuming" ("Joe
is totally consumed by his hobby"), but almost never are called
"addicting." You never hear someone say "Joe is addicted to his
hobby." A consuming coffee hobby -- what a grand addiction!

After a while you will come to realize that coffee addiction is
not evil, and you'll admit to yourself that you too are an
addict. What's more, there's no need to be ashamed of your
addiction. Instead, you'll feel good about it -- and you'll have
a fun hobby as well.

At this point, perhaps you are asking, "How can drinking coffee
be a hobby?" I suppose for amateur coffee tasters it could be a
hobby, but I'm not talking about drinking coffee. I'm talking
about roasting it. (Of course, you'll drink what you roast, so
it's the best of both worlds. Caffeine and taste. Taste and
caffeine. What a beautiful coin!)

Addictions are expensive, right? Hobbies are expensive, right?
Bzzzzt! Wrong, not if your addiction and your hobby are
roasting your own coffee. What do you pay for a pound of coffee?
$8 if you buy your beans at the grocery store? $12 if you buy
them at a retail coffee outlet? How would you like to pay one-
half or one-third that amount? Better yet, how would you like to
pay one-fifth or one-eighth that amount? AND get coffee that
tastes so much better that no one will believe you until they
taste it for themselves?

With home roasting, that's exactly what you get. Infinitely
better tasting coffee (OK, OK, much, much better tasting) while
saving up to seven-eighths of what you currently pay for coffee.
(The last time I bought green coffee beans, I paid $1.52 per
pound.)

Which would you prefer, paying $12/pound for stale, pre-roasted
coffee-for-the-masses, or $1.52/pound for green coffee that you
can drink fresh-roasted exactly the way you like it?

It sounds too good to be true, doesn't it? You're thinking,
"There's got to be a catch," right? I may be an addict, but I'm
proud to be a truthful addict -- yes, there is a catch.

But, my time is up for now. Next time I'll tell you all about
the catch.
