hope. I need to make up for the last few issues. They were a bit
long and heavy reading. I should have a contest to give a prize
to anyone who reads the whole issue. I doubt if I would have to
give out many prizes.

3. A Full City Roast Introduction

I don't know the exact statistics but this roast level is
becoming one of the more popular ones according to my
observations. It is probably due to the great success of the
ubiquitous Starbucks. The full city roast is their trademark.
However, even before Starbucks, the full city roast was the
preferred roast for most in the Northwest. It has a very strong
regional following, as do most roasts. But that is another
story.

Full city is the roast level achieved just after the second
'crack', as a roastmaster would describe. Its color is a medium
dark brown and has tiny patches and droplets of oil on the
surface. Another way to put it is that full city is the lightest
of the dark roasts.

Some reasons for roasting dark are that it greatly diminishes
acidity, accentuates body and increases sweetness. However, on
the down side it also removes any subtle varietal distinctions
and slightly adds pungency (bitterness). Fortunately at this
roast level the caramel sweetness easily overpowers any pungency
created to give it a bitter-sweetness, which is comparable to
bittersweet dark chocolate.

Full city can be a bit confusing because of its chameleon like
name. This same roast level also goes by the aliases of Viennese
roast, Light French and Light espresso. It all depends on what
part of the world and country you are in at the time. Here is a
bit of advice, if this is the level of roast you like, instead
of searching for it based on the name, you should look at the
beans for the correct signs. The biggest giveaways are its
chestnut color and its slight oiliness.

This concludes our lesson. I hope some of the confusions of the
full city roast have been cleared up.

7. A Little Humor

Farmer Joe was suing a trucking company for injuries sustained
in an accident. In court, the company's fancy lawyer was
questioning Farmer Joe.

"Didn't you say, at the scene of the accident, 'I'm fine'?" said
the lawyer.

Farmer Joe responded, "Well, I'll tell you what happened. I had
just loaded my favorite mule Bessie into the..."

"I didn't ask for any details," the lawyer interrupted. "Just
answer the question. Did you not say, at the scene of the
accident, 'I'm fine'?"

Farmer Joe continued, "Well, I had just got Bessie into the
trailer and I was driving down the road..."

The lawyer interrupted again and said, "Judge, I am trying to
establish the fact that, at the scene of the accident, this man
told the Highway Patrolman that he was just fine. Now, several
months after the accident, he is suing my client. I believe he
is a fraud. Please tell him to simply answer the question."

But the judge was interested in Farmer Joe's story and said to
the lawyer, "I'd like to hear what he has to say about his mule
Bessie."

Joe thanked the judge and proceeded. "Well, as I was saying, I
had just loaded Bessie, my favorite mule, into the trailer and
was driving her down the highway when this huge semi-truck and
trailer ran the stop sign and smacked my truck right in the
side.

"I was thrown into one ditch and Bessie was thrown into the
other. I was hurting real bad and didn't want to move. However,
I could hear ole Bessie moaning and groaning. I knew she was in
terrible shape just by her groans.

"Shortly after the accident a highway patrolman came on the
scene. He could hear Bessie moaning and groaning so he went over
to her. After he looked at her, he took out his gun and shot her
between the eyes. Then the patrolman came across the road with
his gun in his hand and looked at me.

"He said, 'Your mule was in such bad shape I had to shoot her.
How are you feeling?'"

8. Turn the Tables On Gary Talboy by Lance Davis

Hey Robert--

I really like the eJournal, but it is time to turn the tables on
your contributor, Gary Talboy. In the spirit of engaged debate,
consider this a rebuttal, his Bush to my Nader : )

Please explain the mechanics of how "price" paid to peasants
is "artificially manipulated" to be low?
Are you saying that low prices are paid by this "system" to
cause farmers to have to cut their trees so this system can buy
the land with no trees for low prices?

The prices for commodities are low because peasants cannot
unionize.
Why? Feds with guns.

In the post-WWII era, peasants tended to become (or stay)
peasants because their government was not responsive to their
human rights or needs. These countries - anywhere in the Western
Hemisphere, for example - were not democracies in any way,
shape, or form. In fact, the governments tended to be US-imposed
military dictatorships ...A.K.A. banana republics. Until the
fall of Soviet-style communism, the justification for these
Third World autocracies was always "protection of our sphere of
influence." It goes back to the Monroe Doctrine, which was
enunciated on Dec. 2, 1823. In short, the MD "allowed" the US to
dictate the inner workings of foreign countries in the Western
Hemisphere - with or without their consent. Incidentally, the MD
was never formally recognized in international law.

With the fall of the communist ideology about 10 years ago, it's
not too surprising to see their ideological place taken by
equally imperialist, market zealots. One of the defining
characteristics of these marketeers is a convenient ignorance of
America's history of destabilizing foreign governments for their
own political and economic purposes. For example, that the
author refers to these people as peasants - with no sense of
irony - is fairly typical nowadays. The idea that the market is
some sort of bastion of democracy is a malicious fiction only
possible in a First World boom economy, where the arms of
communication (i.e. the mass media) are complicit in this
fiction. In fact, any opposition to the idea of "the market as
great equalizer" is pushed to the fringe of economic policy
discussion - if not met with outright hostility.

Prior to the advent of washed coffee processing, NO ONE PAID
VILLIAGERS for their "traditional" labor!

Once again, this is the grotesque (and dangerous) thinking of
market worshipers. The suggestion here is that we're doing these
people a favor by exploiting them and their resources. The only
reason coffee prices are even reasonably low is because - again
farmers are not able to organize. If these people did attempt
to unionize they would be killed. By removing the peasants from
their socio-political context, the author conveniently places
them into his all-encompassing market democracy that doesn't, in
fact, exist.

OPINION: This logic is madness! Its only value is to
manipulate the ignorant.

My point exactly.

OBSERVATION: Here we go again with the "us" against "them"
theme. There are only a few very large multi-national coffee
companies in the world and they all sell cheap coffee. They
have nothing to do with Specialty Coffee, and if they stopped
buying the cheap coffee millions of small farmers would truly
starve and economies of many third-world producers would fold
and require U.S. $$ assistance from IMF and World Bank
resources. Producers provide "cheap" coffee because that is
what the multi-nationals want. The multi-nationals want cheap
coffee only because consumers around the world "demand" cheap
coffee.

Once again, the faulty and irresponsible logic here is that
we're doing these people a favor by including them in the Great
Market Democracy that doesn't exist. What makes this thinking
ultimately flawed is the context in which these people make
their living. Yes, the economies of third-world countries are
dependent on US dollars and without those dollars millions of
small farmers would truly starve.
That being said, the author arrogantly fails to note his use of
"third world." There's a reason why we're in the "First" World
and they're in the "Third." It's called bigger and better guns.
In the cruder era following WWII, we would assassinate those
leaders who attempted to oppose US policy - see Chile,
Guatemala, Indonesia, etc for proof.
Nowadays we don't need to kill, since these countries do that
for us. We manufacture weapons and sell them to these Third
World governments, who then "guarantee" that their farmers work
cheaply for the US. They are not democracies. They are vicious
military dictatorships at our beck and call.

Therefore, when the author suggests that producers provide cheap
coffee because multinationals are merely responding to the
desires of consumers, my answer is, "So what?" It's as though
these market worshippers feel like exploitation is a human
right. Only in a First World boom economy, where opposition to
wage slavery and indentured servitude is virtually silenced or
pushed to the fringe, could a rationalization of exploitation
like this be put forth. The author also fails to note that the
IMF and World Bank use their loans as carrot-and-stick
maneuvers. If a country wants loans, it HAS TO provide labor as
cheaply as possible. That this process is then passed off as
"the natural way of the market," is a gross distortion.

Keep in mind, too, that most of the money flowing into these
countries stays in the hands of the government. These farmers
don't have stock options, fund managers, diversified portfolios,
let alone paychecks.
Doesn't the author understand the role of American foreign
policy makers in the creation and sustenance of the Third World?
In other words, the Third World will be staying the Third World.
That's the whole point of the Third World. They are the source
of cheap labor and natural resources. For lack of better word
(frankly, there is no better word), the Third World is nothing
more than a colony of the US and multinational corporations.


QUESTIONS: Please explain the process by which consumers can
force "mega-giant" corporations to protect trees, birds, and
people while providing them with superior coffee. There are a
number of "steps" that would be required for this to take place
and I am wondering if you could elaborate on what these steps
would be and how these changes would therefore come about in a
free economy.

They cannot. That is the essential hypocrisy and cowardice at
the core of this so-called Market Democracy. It's democratic in
that anyone who wants to exploit "lesser peoples" can, but
attempt to apply the principles of democracy in protecting these
same "lesser peoples," let alone the environment in which they
live, and the market ideologues cravenly suggest that "their
hands are tied." It's as though they want their cake and they
want to eat it, but if anyone should suggest that they clean up
their cake-making mess, it's someone else's problem. As Homer
Simpson once said, in a perceptive critique of American
thinking, "Can't someone else do it?" Corporations are no longer
responsible to the planet in which they live, and they are
barely responsible to governments. In fact, they are only
responsible to their stockholders. This is a sick mentality,
which is rapidly becoming conventional "wisdom."

9. Coffee One Pan Cake by Tuan

2 1/2 Cups all-purpose flour
1 1/2 Cups sugar
1/2 Cup cocoa
2 tsp. baking soda
1/2 tsp. salt
2/3 cup vegetable oil
2 Tbsp. cider vinegar
1 Tbsp. vanilla
2 Cups cold coffee
1/3 Cup sugar
1/2 tsp. cinnamon

Stir together flour, 1 1/2 cups sugar, cocoa, soda and salt
in an ungreased 12x8-inch baking pan.
Make 3 wells in the mixture; pour oil in one, vinegar in
one and vanilla in one.
Pour in coffee and stir all with a fork until well mixed.
Spread into an even layer.
Combine 1/3 cup sugar and cinnamon; sprinkle half over batter.
Bake in a 350 degree oven for 35 to 40 minutes. Sprinkle
remaining cinnamon sugar over hot cake. Cool 15 to 20 minutes
before cutting (if you can wait that long). Enjoy with a cup or
three of your favorite coffee.

Beautiful 1989 Probat L-5 coffee roaster (S/N# 89-40333). 5 Kilo
(up to 11 pounds per batch) drum coffee shop roaster. Color is
forest green with gold trim and a polished brass cover over the
roasting drum. It is in like new condition & appearance.

The unit includes bean temperature and roaster temperature
probes with digital readouts that were professionally and
tastefully installed. The LED readouts are mounted on the right
side front of the roaster.

Asking price is $13,500 (US$) as is, where is. Buyer responsible
for pickup and transportation. The roaster is available for
inspection between 8AM and 4PM, Monday - Friday at our roasting
plant located in Madison, Wisconsin.
